The business will be very simple. In general it will offer a service through direct mail, receive responses, perform analysis/research for the customer and return the results to the customer. I would like to operate this business as a sole proprietorship while continuing to work at my full-time visa-sponsored position.

I don’t see any objection to that, as long as you continue to reside legally in the country. Make sure you declare your revenue to stay out of trouble. You can.

Anyone on an employment visa is restricted to working for the employer which sponsored the visa.
If you want to start your own biz, get an investor’s visa. $1 million minimum investment, and you must hire a minimum of 10 Americans. You’ll also need enough money to support yourself until the biz is generating sufficient cashflow to draw a salary.
